We started with a simple belief: to treat the finest fish with the discipline of Japan and the warmth of Spanish cooking. What began as a counter in Madrid is now a brand on three continents, true to the same care for detail as on the day our first table opened.

99 Sushi Bar is part of Ninety Nine SB Investment LLC, a group led by its CEO, Jaime Castañeda. Different concepts share the same high standard, each with its own voice but one common goal: the produce, the service and consistency across all its venues.

We work with the best fish of the day, with precise cuts and respect for the produce. We are not trying to surprise with tricks, but to give our guests the purity of what is essential: flavour, season and technique in the right measure.
